Ingredients
  

Base Ingredients
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 medium Zucchini, diced
  • 1 cup Green beans, chopped (fresh or frozen)
  • 1 can (14.5 oz) Canned diced tomatoes
  • 4 cups Vegetable broth Can substitute with chicken broth for non-vegetarian
  • 1 can (15 oz) Kidney beans, drained and rinsed Or chickpeas for a twist
  • 1 cup Pasta (small shapes like ditalini or elbow)
  • 2 cups Spinach or kale, roughly chopped
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat until it shimmers.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for around 30 seconds until fragrant.
  4. Add the diced carrots and celery, cooking for another 5 minutes until softened.
  5. Incorporate the zucchini and green beans next, cooking for another 3 minutes.
  6. Introduce the canned diced tomatoes and vegetable broth, turn up the heat to a gentle boil.
  7. Once boiling, reduce the heat to a simmer and add Italian seasoning, salt, and pepper.
  8. After simmering for about 10 minutes, add your choice of pasta.
  9. Continue to simmer until the pasta is al dente, about 8-10 minutes.
  10. If adding leafy greens, stir them in during the last couple of minutes to wilt.
  11. Taste and adjust the seasoning if needed, and serve hot garnished with Parmesan cheese.

Notes
