  • 1 1/2 cups Cadbury Mini Eggs, crushed (reserve some for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well between each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually combine the dry mixture with the wet ingredients, mixing just until everything is combined.
  6. Gently fold in the crushed Mini Eggs.
  7. Scoop tablespoon-sized portions onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Top each cookie with a few whole Mini Eggs.
Baking
  1. Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden but the centers still look soft.
  2. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
