Preparation
- Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Add the softened butter, eggs, lemon zest, and lemon juice into the dry ingredients.
- Beat the mixture on medium speed until light and fluffy, about 2-3 minutes.
Baking
- Spoon the batter into your prepared muffin tin, filling each compartment about two-thirds full.
- Bake for approximately 12-15 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the tin for about 5 minutes before transferring them to a wire rack.
Making the Glaze
- In a small bowl, mix powdered sugar with 2 tablespoons of fresh lemon juice until smooth.
- If the glaze is too thick, add another tablespoon of lemon juice until it reaches the desired consistency.
Finishing Touch
- Once the mini cakes have cooled, drizzle the lemon glaze over the top.
