Ingredients
  

For the Lemon Filling
  • 1 cup fresh lemon juice (about 4-5 lemons) Use fresh lemons for the best flavor.
  • 1 cup granulated sugar Adjust for desired sweetness.
  • 1/4 cup unsalted butter, cut into pieces Make sure the butter is at room temperature.
  • 4 large egg yolks Separate and set aside egg whites for meringue.
  • 2 tablespoons cornstarch Helps thicken the lemon filling.
  • Pinch salt Enhances the flavors.
For the Meringue
  • 4 large egg whites (room temperature) Ensure no yolks are present for best results.
  • 1/4 teaspoon cream of tartar Helps stabilize the meringue.
  • 1 cup granulated sugar Add gradually to maintain meringue consistency.
  • 1 teaspoon vanilla extract For added flavor.
For the Tarts
  • 12 pieces pre-made mini tart shells (store-bought) For convenience.

Method
 

Preparation of Lemon Filling
  1. In a medium saucepan over medium heat, combine fresh lemon juice, sugar, butter, and a pinch of salt. Stir occasionally until the butter melts and the mixture is warm.
  2. Whisk the egg yolks and cornstarch in a bowl.
  3. Gradually pour some of the warm mixture into the bowl with the egg yolks, whisking continuously to temper the eggs.
  4. Return the mixture back to the saucepan and cook over medium heat, stirring constantly until thickened (about 5–7 minutes).
  5. Remove from heat and stir in the lemon zest. Let it cool for a few minutes, then spoon it into the mini tart shells.
Preparation of Meringue
  1. In a clean mixing bowl, whip egg whites and cream of tartar with a mixer on medium speed until soft peaks form.
  2. Gradually add in sugar, one tablespoon at a time, until glossy and stiff peaks form (about 4–5 minutes).
  3. Add vanilla extract and mix until well combined.
Assembly and Baking
  1. Spoon the meringue over each lemon-filled tart, covering the filling completely with peaks and swirls.
  2. Bake in a preheated oven at 350°F (175°C) for 8–10 minutes or until the meringue is golden brown.
  3. Allow the tarts to cool completely before serving.

Notes
