Ingredients

Main ingredients
  • 1 pound Brussels sprouts, trimmed and halved
  • 3 tablespoons miso paste (white or red) Based on your preference
  • 2 tablespoons maple syrup (or honey)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Sesame seeds for garnish
  • Optional: Chopped green onions for garnish

Method

Preparation
  1. Preheat your oven to 425°F (220°C). This high temperature will help achieve that coveted crispy texture on the Brussels sprouts.
  2. While the oven is heating, rinse the Brussels sprouts and trim the ends. Halving them allows for even cooking and maximizes flavor absorption from the glaze.
  3. In a small bowl, whisk together the miso paste, maple syrup, olive oil, and a pinch of salt and pepper. The glaze should be smooth, with a lovely golden hue, ready to coat the sprouts in flavor.
  4. In a large bowl or directly on a baking sheet, toss the halved Brussels sprouts with the miso glaze until they’re well coated.
Cooking
  1. Spread the Brussels sprouts out in a single layer on a baking sheet and roast them in the preheated oven for about 20-25 minutes, flipping halfway through.
  2. They’re done when they have a beautiful golden-brown exterior and a fragrant aroma fills your kitchen.
Serving
  1. Once roasted, sprinkle sesame seeds or chopped green onions over the top for a burst of freshness and crunch. Serve warm.

Notes

Miso-glazed Brussels sprouts make an excellent side for any main dish. They are delicious cold as leftovers on a salad. For variations, add a teaspoon of sriracha or chili flakes for heat, use maple syrup for a vegan option, or experiment with minced garlic or ginger in the glaze.
