Ingredients
  

For the Crust
  • 1.5 cups 1 ½ cups digestive biscuits or graham cracker crumbs
  • 0.5 cup ½ cup unsalted butter, melted
  • 2 tablespoons 2 tablespoons sugar
For the Filling
  • 16 oz 16 oz cream cheese, softened
  • 1.5 cups 1 ½ cups powdered sugar
  • 0.5 cup ½ cup sour cream
  • 2 Juice of 2 limes
  • 1 Zest of 1 lime
  • 0.5 cup ½ cup fresh mint leaves, finely chopped
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 tablespoon 1 tablespoon gelatin (optional for firmness)
  • 2 tablespoons 2 tablespoons water (if using gelatin)
For Garnish
  • Fresh mint leaves
  • Lime zest

Method
 

Preparation of Crust
  1. In a medium bowl, combine the biscuit crumbs, melted butter, and sugar, mixing until fully combined.
  2. Spread this mixture evenly into the bottom of a 9-inch pie dish; press it down firmly with the back of a spoon to create a solid base.
  3. Chill in the refrigerator while you prepare the filling.
Preparation of Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Gradually add powdered sugar, ensuring no lumps remain.
  3. Incorporate the sour cream, lime juice, lime zest, chopped mint leaves, and vanilla extract, mixing until everything is well combined.
  4. If you prefer a firmer cheesecake, dissolve the gelatin in water and fold it into the filling at this stage.
  5. Pour the creamy mixture over the chilled crust and smooth the top with a spatula.
Setting the Cheesecake
  1. Allow the cheesecake to set in the fridge for at least 4 hours, or overnight if possible.
  2. Once it’s set, garnish with fresh mint leaves and a sprinkle of lime zest before serving.
