Cooking
- Mix in carrots, celery, and potatoes, stirring for a couple of minutes.
- Add canned tomatoes with juice and broth. Stir in bay leaf and thyme.
- Bring the stew to a gentle boil, then reduce heat to low and cover. Let simmer for about an hour.
- Taste and adjust seasoning as necessary. Remove the bay leaf before serving.
- Garnish with fresh parsley if desired.
