Ingredients

For the Filling
  • 2 cups fresh or frozen cranberries If using frozen, thaw and drain excess moisture.
  • 1 cup granulated sugar Adjust for desired sweetness.
  • 1 tablespoon orange zest Can substitute with lemon zest.
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 prepared pie crust (store-bought or homemade)
  • 1 egg (for egg wash) Substitute with a plant-based alternative for vegan option.
  • a pinch cinnamon Optional, adds warmth.

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cranberries, granulated sugar, orange zest, cornstarch, lemon juice, and vanilla extract. If you enjoy a hint of warmth, add a pinch of cinnamon. Mix well until the ingredients are nicely incorporated.
  3. Pour the cranberry mixture into the prepared pie crust, ensuring an even distribution of the berries.
  4. Beat the egg and brush it over the crust's edges for a glossy finish.
Baking
  1. Place the pie in the preheated oven and bake for 45-50 minutes, until the filling is bubbly and the crust is golden brown. If the edges brown too quickly, cover them with aluminum foil.
Cooling
  1. Remove the pie from the oven and allow it to cool for at least an hour before slicing.

Notes

Pair this pie with whipped cream or vanilla ice cream. For a lovely touch, sprinkle extra orange zest on top just before serving. Consider pre-baking the crust slightly for a crispier texture.
