Method
Preparation of the crust

Cream layer
- Beat together the cream cheese and powdered sugar until smooth and fluffy.
- Fold in the whipped topping and spread it evenly over the crust.
- Chill in the fridge while preparing the lemon layer.
Lemon layer
- In a saucepan, combine lemon juice, lemon zest, sugar, cornstarch, and salt.
- Stir in water and bring to a boil over medium heat, stirring until it thickens (about 5-7 minutes).
- Remove from heat and let it cool slightly before pouring over the cream layer.
Blueberry topping
- Toss blueberries with sugar and lemon juice in a bowl.
- Spread blueberries evenly over the lemon layer.
Final assembly
- Cover the dish and let it chill in the fridge for at least four hours or overnight.
