Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 0.25 cups ¼ cup granulated sugar
For the cream layer
  • 8 oz 8 oz cream cheese, softened
  • 1 cups 1 cup powdered sugar
  • 1 cups 1 cup whipped topping (or homemade whipped cream)
  • 2 teaspoons 2 teaspoons vanilla extract
For the lemon layer
  • 1 cups 1 cup fresh lemon juice (about 4-6 lemons)
  • 2 tablespoons 2 tablespoons lemon zest
  • 1.25 cups 1 ¼ cups granulated sugar
  • 2 tablespoons 2 tablespoons cornstarch
  • 0.25 teaspoons ¼ teaspoon salt
  • 2 cups 2 cups water
For the blueberry topping
  • 2 cups 2 cups fresh blueberries
  • 0.5 cups ½ cup granulated sugar
  • 1 tablespoon 1 tablespoon lemon juice

Method
 

Preparation of the crust
  1. Blend graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
  2. Press the mixture into the bottom of a 9x13 inch dish to form the crust, ensuring it is packed tightly.
Cream layer
  1. Beat together the cream cheese and powdered sugar until smooth and fluffy.
  2. Fold in the whipped topping and spread it evenly over the crust.
  3. Chill in the fridge while preparing the lemon layer.
Lemon layer
  1. In a saucepan, combine lemon juice, lemon zest, sugar, cornstarch, and salt.
  2. Stir in water and bring to a boil over medium heat, stirring until it thickens (about 5-7 minutes).
  3. Remove from heat and let it cool slightly before pouring over the cream layer.
Blueberry topping
  1. Toss blueberries with sugar and lemon juice in a bowl.
  2. Spread blueberries evenly over the lemon layer.
Final assembly
  1. Cover the dish and let it chill in the fridge for at least four hours or overnight.
