Ingredients
  

Cookie Mixture
  • 1 cup crushed chocolate cookies (like Oreos, without the cream filling)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon pure peppermint extract
  • a pinch of salt
Chocolate Coating
  • 1 cup semi-sweet chocolate chips (for dipping)

Method
 

Preparation
  1. Gather all your ingredients.
  2. In a large mixing bowl, combine the crushed chocolate cookies, cocoa powder, and powdered sugar. Mix well to avoid clumps.
  3. Pour in the melted butter, peppermint extract, and salt. Stir until the mixture resembles wet sand.
  4. Shape the mixture into little discs, about 1/2 inch thick, and place them on a parchment-lined baking sheet.
Chilling
  1. Refrigerate the cookies for at least 30 minutes to firm up.
Dipping
  1. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Dip each chilled cookie into the melted chocolate, ensuring they are fully covered. Allow excess chocolate to drip off.
  3. Place the dipped cookies back on the parchment and let them set at room temperature or in the fridge until the chocolate hardens.
