No-Bake Oreo Cheesecake Bites

Delicious and guilt-free no-bake Oreo cheesecake bites, combining creamy yogurt and cream cheese with crunchy Oreo cookies for a delightful treat.

Ingredients
  

For the crust
  • 1 cup Oreo cookie crumbs (about 10 cookies) You can use store-bought cookie crumbs for convenience.
  • 1/4 cup coconut oil or unsalted butter, melted Both options work well for binding the crust.
For the cheesecake filling
  • 8 oz cream cheese, softened Regular or vegan cream cheese can be used.
  • 1 cup plain Greek yogurt Any type of yogurt can be substituted if preferred.
  • 1/2 cup powdered sugar Can be adjusted to taste; honey can be used as a natural sweetener.
  • 1 tsp vanilla extract
  • 1 pinch salt
Optional toppings
  • Additional Oreo crumbs For sprinkling on top.
  • Mini chocolate chips To enhance sweetness and presentation.
  • Whipped cream For a luxurious finish.

Method
 

Preparation of crust
  1. In a medium bowl, combine the Oreo cookie crumbs and melted coconut oil until it resembles wet sand.
  2. Press this mixture firmly into the bottom of a mini muffin tin or silicone molds to create a base.
  3. Freeze the crust for about 15 minutes.
Making the cheesecake filling
  1. Blend the softened cream cheese until smooth in another bowl.
  2. Add in the Greek yogurt, powdered sugar, vanilla extract, and a pinch of salt. Mix until fully incorporated.
Assembly and chilling
  1. Remove the crust from the freezer and scoop a dollop of the cheesecake filling onto each crust.
  2. Sprinkle extra Oreo crumbs or mini chocolate chips on top, if desired.
  3. Refrigerate the bites for at least an hour to set.
  4. Once firm, gently pop them out of the molds and serve chilled.

Notes
