Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs or ginger snaps for added spice
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons brown sugar optional
For the filling
  • 1 package cream cheese, softened (8 oz)
  • 1 cup pumpkin puree canned or fresh
  • 0.5 cups powdered sugar
  • 0.5 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 0.25 teaspoon ginger
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

Method
 

Preparation of the crust
  1. In a mixing bowl, combine the graham cracker crumbs, melted butter, and brown sugar. Mix until it resembles wet sand.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan.
Making the filling
  1. In a large bowl, beat the softened cream cheese until creamy and smooth.
  2. Add in the pumpkin puree, powdered sugar, cinnamon, nutmeg, ginger, and vanilla. Mix until fully incorporated.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the pumpkin mixture.
Assembly and chilling
  1. Pour the filling over the crust and smooth it out with a spatula.
  2. Cover with plastic wrap and refrigerate for at least four hours, or ideally overnight.

Notes

For a dairy-free version, use vegan cream cheese and coconut milk instead of heavy cream.
