Method
 

Preparation
  1. Combine the oats and milk in a bowl, allowing them to soak for about 10 minutes.
  2. After soaking, whisk in the egg, baking powder, sugar, salt, and vanilla extract until you achieve a smooth batter.
Cooking
  1. Heat a non-stick skillet over medium heat, adding a little butter or oil to the pan.
  2. Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.
  3. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  4. Repeat with the remaining batter.
