Method
 

Baking the Cookies
  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, mix the flour, baking soda, salt, and cinnamon together.
  3. In a larger bowl, cream the softened butter with both the brown and granulated sugar until it’s light and fluffy, about 2-3 minutes.
  4. Add in the egg and vanilla extract, blending until fully incorporated.
  5. Gradually mix in the flour mixture, then fold in the oats until everything is well combined.
  6. Scoop the dough onto a baking sheet lined with parchment paper, spacing the cookies about 2 inches apart.
  7. Bake for 10-12 minutes, watching for a slightly golden edge while ensuring the centers remain chewy.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Preparing the Filling
  1. Beat the softened butter with powdered sugar, vanilla extract, and milk until smooth and fluffy.
  2. Once the cookies are completely cool, spread a hearty dollop of this creamy filling between two cookies, creating the oatmeal cream pies.
