  • 1 lb Ground Beef or Turkey (or lentils for a vegetarian option) Use lentils for a vegetarian option.
  • 2 tablespoons Taco Seasoning Store-bought or homemade.
  • 1 can Black Beans, drained and rinsed
  • 1 cup Corn (frozen or canned)
  • 1 can Diced Tomatoes (with juices)
  • 2 cups Chicken or Vegetable Broth
  • 1.5 cups Cheddar Cheese, shredded (or a vegan cheese alternative)
  • 4 oz Cream Cheese (optional for extra creaminess)
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper
  • Green Onions or Cilantro (for garnish)

Method
 

Cooking Instructions
  1. Heat a splash of olive oil in a large pot over medium heat.
  2. Add the ground beef or turkey, breaking it apart with a spoon, and cook until browned (about 5-7 minutes).
  3. Sprinkle in the taco seasoning and stir until the meat is well coated.
  4. Add the black beans, corn, and diced tomatoes (with juices) to the pot.
  5. Pour in the broth and add the pasta. Stir together and bring to a gentle boil.
  6. Reduce heat to low, cover, and let simmer for about 12-15 minutes until the pasta is al dente and has absorbed some broth.
  7. Optional: Stir in the cream cheese until melted for a creamier texture.
  8. Top with shredded cheddar cheese and allow it to melt before stirring the pasta.
