  • 1/4 cup brown sugar, packed
  • 1/4 cup honey Maple syrup can be used for a vegan version.
  • 1/2 cup orange juice Preferably fresh.
  • 1/4 cup vegetable oil
  • 1 large egg Can be replaced with a flax egg or applesauce for a vegan alternative.
  • 1 zest orange

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter.
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground ginger, and cinnamon.
  3. In a separate bowl, combine the brown sugar and honey. Whisk in the orange juice, vegetable oil, egg, and orange zest until smooth and well-blended.
  4. Carefully fold the dry ingredients into the wet mixture until just combined, being mindful not to overmix.
Baking
  1. Pour the batter into the prepared cake pan and spread it evenly.
  2. Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  3. Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
