  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream Or half-and-half for a lighter option
  • 1 cup shredded cheddar cheese Plus more for garnish
  • 1/2 cup cooked and crumbled bacon Or turkey bacon for a healthier twist
  • Salt and black pepper, to taste
  • Chives or green onions, for garnish (optional)

Method
 

Preparation
  1. Peel and cube the potatoes into one-inch pieces.
  2. In a large pot, combine the cubed potatoes, diced onion, and minced garlic.
  3. Pour in the chicken or vegetable broth and bring to a gentle boil.
  4. Reduce the heat and let it simmer for about 15-20 minutes until the potatoes are fork-tender.
Cooking
  1. Stir in the heavy cream and shredded cheddar cheese.
  2. Use a potato masher to break down some of the potatoes, leaving a few chunks for texture.
  3. If preferred, blend part of the soup with an immersion blender for a silky smooth consistency.
  4. Add the crumbled bacon, season with salt and pepper, and stir well to combine.
  5. Heat through and taste for seasoning adjustments before serving.
Serving
  1. Ladle the soup into bowls and garnish with extra cheese, bacon, and chives or green onions.
