  • 1.5 to 2 pounds salmon fillet (skin-on, one piece or two individual fillets)
  • 2 tablespoons olive oil (or melted butter for richer flavor)
  • 2 cloves garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 small lemon (zest and juice)
  • 1 teaspoon Dijon mustard (optional, for a subtle tang)
  • 1 tablespoon chopped fresh parsley or dill (or 1 teaspoon dried)
  • 1/2 teaspoon flaky sea salt, plus extra for tasting
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika or sweet paprika (optional, for color)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or foil for easy cleanup.
  2. Let the salmon sit at room temperature for 10–15 minutes while you mix the rub.
  3. In a small bowl, whisk together the olive oil, minced garlic, lemon zest and juice, Dijon (if using), herbs, salt, pepper, and paprika.
  4. Taste a tiny smear on the back of your hand — you should get a bright, balanced hit of citrus and garlic.
Cooking
  1. Pat the salmon dry with paper towels and place the fillet skin-side down on the prepared sheet.
  2. Brush the top evenly with the lemon-garlic mixture, ensuring to coat the thicker parts well.
  3. Slide the salmon into the oven and roast for 10–14 minutes for a typical 1-inch thick fillet, or up to 16 minutes for thicker pieces.
  4. If you want a touch of char on top, switch the oven to broil for the last 1–2 minutes, watching closely.
  5. Once done, let the salmon rest for 3–5 minutes, then serve skin-side down.

Notes
