Ingredients
  

Asparagus
  • 1 ½ pounds asparagus, woody ends trimmed (about 1 bunch) Thick spears roast beautifully; thin ones cook faster.
Seasoning
  • 2 tablespoons olive oil (or avocado oil)
  • ¼ to ½ teaspoon flaky sea salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional, for brightness)
  • 1 tablespoon fresh lemon juice (optional)
  • pinch red pepper flakes (optional, for a little heat)
Cheese
  • ½ cup freshly grated Parmesan cheese (not pre-shredded)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the asparagus dry and arrange on a rimmed baking sheet in a single layer.
  3. Drizzle with olive oil and gently toss to coat each spear lightly.
  4. Spread the asparagus out so they aren’t overlapping.
  5. Season with salt and pepper, then roast for about 10–14 minutes depending on thickness.
Cooking
  1. Look for the tips to be slightly browned and the stalks to pierce easily with a fork but still have some snap.
  2. About 2–3 minutes before they’re done, pull the tray out and sprinkle the Parmesan evenly over the asparagus.
  3. Return to the oven until the cheese melts and turns golden.
  4. Add lemon zest right after taking it out from the oven; drizzle lemon juice just before serving.
  5. Finish with red pepper flakes if desired, then transfer to a serving dish.

Notes
