  • 8 ounces small pasta (like shells or elbow macaroni) You can swap in whole wheat or gluten-free pasta.
  • 1 cup fresh or frozen peas
  • 2 tablespoons olive oil or butter Use butter for a richer flavor.
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese Plus more for serving, optional.
  • to taste Salt and pepper
  • for garnish Fresh mint or basil Optional.
  • 1 teaspoon lemon zest For a bright finish, optional.

Method
 

Preparation
  1. Boil a large pot of salted water and cook the pasta according to package directions until al dente. Reserve a cup of pasta water, then drain the rest and set aside.
  2. In the same pot, heat olive oil (or melt butter) over medium heat. Add minced garlic and sauté for about a minute until fragrant.
Cooking
  1. Add peas to the pot. If using fresh peas, cook for 2-3 minutes. For frozen peas, cook for about a minute.
  2. Return the drained pasta to the pot, combining it with the peas and garlic. Sprinkle in grated Parmesan cheese and add reserved pasta water if the mixture is too dry. Season with salt and pepper.
  3. For a fresh finish, add lemon zest and herbs if desired. Mix well.

Notes
