Preparation
- Preheat your oven to 350°F (175°C) and grease a mini muffin tin with melted butter.
- In a mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
- Incorporate the eggs one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
- Gradually add this dry mixture to the wet ingredients, stirring until just combined.
Baking
- Toss the sliced peaches with lemon juice, then layer them at the bottom of each muffin cavity.
- Pour the cake batter over the top, filling each cup about three-quarters full.
- Bake for approximately 18-20 minutes or until the cakes are golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
- Allow the cakes to cool in the pan for a few minutes before carefully inverting onto a wire rack to cool completely.
