Ingredients
  

For the Cake Batter
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted (plus extra for greasing) Can substitute with plant-based butter for a healthier version.
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 large eggs For vegan version, use flax eggs or unsweetened applesauce.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
For the Topping
  • 2 medium ripe peaches, sliced Can be substituted with other seasonal fruits like nectarines or plums.
  • 1 tablespoon lemon juice (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin with melted butter.
  2. In a mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  3. Incorporate the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
Baking
  1. Toss the sliced peaches with lemon juice, then layer them at the bottom of each muffin cavity.
  2. Pour the cake batter over the top, filling each cup about three-quarters full.
  3. Bake for approximately 18-20 minutes or until the cakes are golden brown and a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Allow the cakes to cool in the pan for a few minutes before carefully inverting onto a wire rack to cool completely.
