Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • cup sugar
  • cup brown sugar
Wet Ingredients
  • 1 large egg
  • 1 cup buttermilk (or non-dairy milk with vinegar)
  • cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
Mix-ins
  • 2 cups fresh peaches, chopped
  • ½ cup cream cheese, softened (optional)
  • 1 tablespoon powdered sugar (for the cream cheese filling, optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and both sugars until well combined.
  3. In a separate bowl, mix the egg, buttermilk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients, gently stirring until just combined; it’s okay if there are a few lumps – don’t overmix.
  5. Fold in the chopped fresh peaches.
Cream Cheese Filling
  1. For the optional cream cheese filling, beat the softened cream cheese with the powdered sugar until smooth.
  2. Place a spoonful of muffin batter into each muffin cup, followed by a dollop of cream cheese, and top it off with more batter, filling each cup about three-quarters full.
Baking
  1. Bake in the preheated oven for about 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  2. Let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes
