  • 0.5 cups unsalted butter, melted For binding the crust
  • 0.25 cups granulated sugar To sweeten the crust
For the Cheesecake Filling
  • 16 oz cream cheese, softened Must be at room temperature
  • 0.5 cups creamy peanut butter Smooth texture preferred
  • 0.75 cups powdered sugar For sweetness and texture
  • 1 tsp vanilla extract For flavoring
  • 3 large eggs Added for richness
For Topping
  • 1 cup Butterfinger candy bars, chopped Adds crunch to the top
  • Caramel sauce, for drizzling To finish the bars

Method

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbly.
  3. Press the mixture firmly into the bottom of a greased 9x13 inch baking pan.
  4. Bake for about 10 minutes or until golden.
Cheesecake Filling
  1. While the crust cools, prepare the cheesecake filling. In a separate bowl, beat the softened cream cheese until it’s creamy and free of lumps.
  2. Add the peanut butter and continue mixing until well combined.
  3. Gradually mix in the powdered sugar and vanilla extract, blending thoroughly.
  4. Beat in the eggs one by one until the mixture is smooth and thick.
Baking
  1. Pour the cheesecake filling over the cooled crust, smoothing it out with a spatula.
  2. Sprinkle the chopped Butterfinger pieces over the top.
  3. Bake for 30-35 minutes or until the edges are set but the center still has a little jiggle.
  4. Allow it to cool completely in the pan on a wire rack for at least 2 hours before refrigerating for an additional 2 hours.
  5. Once chilled, cut into bars and drizzle with caramel sauce.
