Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until crumbly.
- Press the mixture firmly into the bottom of a greased 9x13 inch baking pan.
- Bake for about 10 minutes or until golden.
Cheesecake Filling
- While the crust cools, prepare the cheesecake filling. In a separate bowl, beat the softened cream cheese until it’s creamy and free of lumps.
- Add the peanut butter and continue mixing until well combined.
- Gradually mix in the powdered sugar and vanilla extract, blending thoroughly.
- Beat in the eggs one by one until the mixture is smooth and thick.
Baking
- Pour the cheesecake filling over the cooled crust, smoothing it out with a spatula.
- Sprinkle the chopped Butterfinger pieces over the top.
- Bake for 30-35 minutes or until the edges are set but the center still has a little jiggle.
- Allow it to cool completely in the pan on a wire rack for at least 2 hours before refrigerating for an additional 2 hours.
- Once chilled, cut into bars and drizzle with caramel sauce.
