Preparation of the crust
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix the graham cracker crumbs with melted butter and sugar until it resembles wet sand.
- Press this mixture into the bottom of a lined 9x9-inch baking dish, making sure it’s firmly packed.
- Bake for about 10 minutes and then set aside to cool.
Making the cheesecake filling
- In a large mixing bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.
- Gradually add sugar, mixing until well combined.
- Add the eggs, one at a time, blending thoroughly after each addition.
- Stir in the vanilla extract and gently fold in the crushed Butterfinger bars.
Baking the cheesecake
- Pour the cheesecake mixture over the cooled crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes. The edges should look set, while the center can still have a slight jiggle.
- Let it cool completely at room temperature before placing it in the fridge for at least two hours.
Topping the cheesecake
- Whip up some cream for the topping.
- Spread the whipped cream on top of the chilled cheesecake bars.
- Finish with extra crushed Butterfinger bars and mini peanut butter cups.
