Method
Mixing the Base
- In a mixing bowl, combine the creamy peanut butter and softened cream cheese until smooth and well blended.
Adding Sweetness
- Gradually incorporate the powdered sugar, mixing until everything is combined and thick but creamy. Add in the vanilla extract and mix again.
Melting the Chocolate
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat for about 30 seconds, stir, and continue heating in 15-second intervals until melted, being cautious not to overheat.
Folding in Chocolate
- Pour the melted chocolate into the peanut butter mixture and gently mix until incorporated with a marbled effect.
Setting the Fudge
- Line an 8 x 8 inch baking dish with parchment paper and pour the fudge mixture into the dish. Spread evenly and sprinkle with chopped mini peanut butter cups on top.
Chilling
- Refrigerate the dish for at least 2 hours or until set. Lift out and cut into squares.
