Ingredients
  

For the Marinade
  • 1/4 cup Olive oil
  • 1 large Fresh lemon juice from 1 large lemon
  • 2 tablespoons Honey
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Fresh dill or parsley, chopped or 1 tablespoon dried
  • to taste Salt
  • to taste Black pepper
  • optional Crushed red pepper flakes for a hint of heat
For the Salmon
  • 4 pieces Salmon fillets skin-on or skinless

Method
 

Preparation
  1. In a mixing bowl, combine the olive oil, lemon juice, and honey. Whisk together until well-blended.
  2. Fold in the minced garlic and herbs. Season with salt and pepper according to taste.
  3. Place the salmon fillets in a resealable plastic bag or shallow dish, then pour the marinade over the fish.
  4. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, preferably up to overnight.
Cooking
  1. Preheat your grill or oven to medium-high heat.
  2. If grilling, place the fillets skin-side down directly on the grates. For oven cooking, line a baking sheet with foil and place the fillets on it.
  3. Grill for about 6-8 minutes, or bake for 12-15 minutes until the salmon is opaque and flakes easily with a fork.

Notes

Feel free to use different herbs or add smoked paprika for a lovely smoky flavor. For a vegan alternative, tofu can be used instead of salmon.
