  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil (or your favorite cooking oil)

For the Marinade (Optional)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Preparation
  1. Start by marinating the diced chicken (if you want an extra layer of flavor). In a bowl, mix the soy sauce, honey, ginger, and garlic.
  2. Add the chicken, ensuring it’s evenly coated. Let it sit for about 15 minutes while you prepare the other ingredients.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Once hot, toss in the marinated chicken. Cook it until it’s golden brown and cooked through, typically around 6-8 minutes.
  3. Next, add the chopped bell pepper and your choice of vegetables. Stir-fry for an additional 3-4 minutes until the veggies are vibrant and slightly tender, but still crisp.
  4. Fold in the diced pineapple and cooked rice, stirring everything together to ensure an even mix. Let them warm through for about 2-3 minutes.
  5. Season with salt and pepper to taste, and garnish with chopped green onions or fresh cilantro for that burst of freshness.
