Ingredients
  

Main Ingredients
  • 1 medium cucumber, peeled and diced English cucumber works wonderfully for less seeds.
  • 2 cups fresh pineapple, diced Feel free to use canned if fresh isn’t available, but drain well.
  • ½ cup red bell pepper, finely chopped Optional, for a pop of color.
  • ¼ cup red onion, finely chopped Nix this if you prefer milder flavors.
  • 2 tablespoons fresh cilantro, chopped Substitute with mint for a different twist.
  • 1 juice lime Add another if you like it zesty!
  • Salt and pepper to taste

Method
 

Preparation
  1. Wash and peel the cucumber, then dice it into bite-sized pieces.
  2. If using a whole pineapple, cut off the top and bottom, slice the skin off, and dice the meat into chunks.
  3. Chop the red bell pepper and red onion, then toss them in with the cucumber and pineapple.
  4. Sprinkle over the chopped cilantro.
Dressing and Tossing
  1. Squeeze the juice of the lime over the salad, season with salt and pepper, and gently toss everything together.
  2. Let the salad sit for a few minutes to allow the flavors to meld.

Notes
