Ingredients
  

For the Cake
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk Can be substituted with plant-based milk.
  • 1 teaspoon vanilla extract
  • 1-2 drops red food coloring To achieve the pink hue.
For the Topping
  • 1 cup sweetened shredded coconut Unsweetened can be used for less sweetness.
  • 1/2 cup powdered sugar
  • 1/4 cup cream cheese, softened
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Stir in the milk, vanilla, and food coloring until just combined.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually incorporate the dry mixture into the wet ingredients until no streaks of flour remain.
  7. Pour the batter into the greased pan and spread it evenly.
Baking
  1. Bake for about 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Let your bars cool in the pan for about 10 minutes before transferring them to a wire rack.
Topping
  1. In a medium bowl, mix together the softened cream cheese and powdered sugar until smooth.
  2. Gradually add in the milk and vanilla, stirring until creamy.
  3. Fold in the shredded coconut until well combined.
  4. Spread the coconut topping over your cooled cake bars and let them sit for at least an hour to set before slicing.

Notes
