Ingredients
  

  • 4 salmon fillets (6 ounces each)
  • Salt and pepper to taste
  • 1 cup pomegranate juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • Pomegranate seeds for garnish
  • Fresh parsley or cilantro for garnish

  • Saucepan
  • Brush or spoon (for glaze)
  • Spatula
  • Tongs
  • Knife and cutting board

Method
 

  1. Season salmon with salt and pepper.
  2. In a saucepan combine pomegranate juice, honey, soy sauce, garlic, and ginger.
  3. Simmer 5–7 minutes until slightly thickened.
  4. Heat olive oil in skillet over medium-high heat.
  5. Cook salmon skin-side down 4–5 minutes until crispy.
  6. Flip salmon and brush with glaze.
  7. Cook 3–4 minutes more, spooning glaze on top.
  8. Remove from pan and rest 2 minutes.
  9. Garnish with pomegranate seeds and herbs before serving.

Notes
