  • 3 leeks White and light green parts only
  • 1 medium yellow onion For depth

  • 1 cup heavy cream or coconut milk Substitutable for a vegan option
  • 2 tablespoons olive oil Can substitute with butter
  • 1 teaspoon fresh thyme Or ½ teaspoon dried thyme
  • Salt and pepper To taste
  • 1 splash white wine Optional, but recommended

Method
 

Preparation
  1. Rinse the leeks thoroughly under cold water to remove any grit between the layers.
  2. Slice the leeks thinly.
  3. In a large pot, heat olive oil over medium heat, then add the sliced leeks, onion, and a pinch of salt. Cook until the leeks soften and become translucent, around 5-7 minutes.
  4. Peel and dice the potatoes into bite-sized pieces.
  5. Once the leeks and onions are ready, toss the potatoes into the pot and mix everything well.
Cooking
  1. Add the broth, thyme, and a splash of white wine for depth. Bring the mixture to a gentle boil, then reduce heat and let it simmer for about 20-25 minutes.
  2. It's ready when the potatoes are tender and easily pierced with a fork.
Finishing Touches
  1. For a chunky soup, enjoy as is. For a creamy finish, blend the soup using an immersion blender or transfer it in batches to a regular blender.
  2. Stir in the cream (or coconut milk) gradually until reaching the desired consistency.
  3. Season with salt and pepper to taste.
