  • 1 bunch radishes, washed and thinly sliced Substitute with carrots for a sweeter flavor.
  • 1 cucumber, diced Or try zucchini for a fun twist.
  • ½ red onion, finely chopped Green onions are a milder alternative.
  • 1 handful fresh parsley, chopped
  • 1 handful fresh mint, chopped
  • Juice of 1 lemon Add zest for an extra punch.
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Feta cheese (optional, for a creamy touch)

Method
 

Preparation
  1. Slice the radishes paper-thin, as this not only makes them easier to eat but allows their peppery flavor to shine.
  2. Dice the cucumber into bite-sized pieces.
  3. In a mixing bowl, toss together the sliced radishes, cucumber, and finely chopped red onion.
  4. Chop fresh parsley and mint, then fold them gently into the vegetable mixture.
  5. In a small bowl, combine the lemon juice and olive oil, and whisk together.
  6. Pour the dressing over your salad mix and give everything a gentle toss.
  7. Crumble feta cheese over the top if desired.
