  • 2 lbs chicken breasts (cut into bite-sized pieces) Boneless and skinless preferred.
  • 1/2 cup ranch dressing (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese Freshly grated is best.
  • 3 cloves garlic (minced) You can use 1 teaspoon garlic powder as a substitute.
  • 1 tablespoon olive oil Optional for grilling.
  • to taste Salt and pepper For seasoning.
  • Skewers (wooden or metal, soaked if wooden) Soak wooden skewers in water for at least 30 minutes.

Method
 

Marinating the chicken
  1. In a large bowl, combine the chicken pieces with ranch dressing, minced garlic, and grated Parmesan cheese. Season with salt and pepper.
  2. Mix gently to coat each piece, then let marinate for at least 30 minutes.
Skewering the chicken
  1. Preheat the grill to medium-high heat. If using wooden skewers, ensure they have soaked for about 30 minutes.
  2. Thread marinated chicken pieces onto the skewers, leaving small gaps between each piece.
  3. Consider alternating chicken with colorful veggies like bell peppers and zucchini.
Grilling the skewers
  1. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until golden brown and cooked through.
  2. Check for an internal temperature of 165°F (75°C) to ensure they're thoroughly cooked.

Notes
