Preparation
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and powdered sugar in a mixing bowl until fluffy.
- Add the vanilla extract and mix well.
- Gently mix in the flour and salt until the dough just comes together.
- Roll the dough into balls about an inch in diameter and place them on ungreased baking sheets, leaving space between each.
- Create an indentation in the center of each ball using your thumb or the back of a spoon.
- Fill each indentation with about a heaping teaspoon of raspberry jam.
Baking
- Bake the cookies for about 15-18 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheets for a few moments before transferring to a wire rack.
