  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour Gluten-free flour blends work too.
  • 1/4 teaspoon salt
Filling
  • 1 cup raspberry jam Feel free to substitute with your favorite jam or fruit preserves.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar in a mixing bowl until fluffy.
  3. Add the vanilla extract and mix well.
  4. Gently mix in the flour and salt until the dough just comes together.
  5. Roll the dough into balls about an inch in diameter and place them on ungreased baking sheets, leaving space between each.
  6. Create an indentation in the center of each ball using your thumb or the back of a spoon.
  7. Fill each indentation with about a heaping teaspoon of raspberry jam.
Baking
  1. Bake the cookies for about 15-18 minutes, or until the edges are lightly golden.
  2. Let them cool on the baking sheets for a few moments before transferring to a wire rack.
