Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, salt, and cocoa powder.
- In another bowl, mix the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
Baking
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
- Pour the batter evenly into your prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then flip them onto a wire rack to cool completely.
Making the Frosting
- Beat the softened cream cheese and butter together until fluffy. Gradually add powdered sugar, mixing until smooth. Finish with vanilla extract and a pinch of salt.
Assembling
- Place one cake layer on a serving platter. Cover the top with frosting, add the second layer, and frost the top and sides as desired.
