  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 1 Juice of 1 lemon
  • Salt and pepper, to taste

  1. Start by rinsing and draining your white beans. This will remove any excess sodium, giving you a cleaner taste.
  2. In a large mixing bowl, combine the beans with the diced cucumber, halved cherry tomatoes, and finely chopped red onion. Toss gently to mix everything together, ensuring the beans remain whole.
  3. Next, prepare the dressing in a separate bowl. Whisk together the olive oil, juice of one lemon, and a generous pinch of salt and pepper.
  4. Once it’s well combined, pour this dressing over your salad mixture, tossing to coat evenly.
  5. Finally, fold in the freshly chopped parsley for that herbaceous lift.
  6. Let the salad sit for a few minutes before serving to allow the flavors to meld beautifully.
