- Peel the onion and slice it as thinly as possible. The thinner the slices, the quicker they pickle.
- In a medium saucepan, combine the apple cider vinegar, water, sugar, and salt. Heat over medium heat until the sugar dissolves.
- Once sugar is dissolved, remove the saucepan from heat and add the sliced onion, smashed garlic, and jalapeño slices. Stir well to coat the onions.
- Transfer the mixture to a clean jar, packing the onions tightly and ensuring they are submerged in the liquid. Use a small weight or parchment if necessary.
- Let the onions cool to room temperature before sealing the jars and refrigerating for at least an hour, preferably overnight.
