Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a small saucepan over medium heat, combine chopped rhubarb, brown sugar, and butter. Stir occasionally until bubbly and rhubarb is tender (about 5-8 minutes).
- Spoon the rhubarb mixture into the bottom of the muffin tin.
- In a large mixing bowl, combine flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together buttermilk, egg, and vanilla extract.
- Add the wet ingredients to the dry and stir until just combined, being careful not to overmix.
Baking
- Scoop the batter over the prepared rhubarb mixture in the muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool for a few minutes before inverting onto a serving platter.
