Ingredients

Dry Ingredients
  • 2.5 cups all-purpose flour (can substitute with gluten-free flour)
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened (or vegan butter for a dairy-free option)
  • 2 cups granulated sugar (or coconut sugar for a deeper flavor)
  • 4 large eggs (or flax eggs for a vegan version)
  • 1 tablespoon vanilla extract
  • 1 cup coconut milk (you could use almond or oat milk if preferred)
  • 1 cup shredded coconut (sweetened or unsweetened, based on preference)
  • Powdered sugar for dusting (optional)

Method

Preparation and Mixing
  1. Preheat your oven to 350°F (175°C) and grease a Bundt pan thoroughly.
  2. In one bowl, whisk together the flour, baking powder, and salt.
  3. In another large mixing bowl, beat the softened butter and sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and coconut milk.
  6. Gradually add the flour mixture, folding just until combined.
  7. Fold in the shredded coconut gently.
Baking
  1. Pour the batter into the prepared Bundt pan and smooth the top.
  2. Bake in your preheated oven for about 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  4. Dust with powdered sugar before serving, if desired.

Notes

Consider adding lime or orange zest for a citrusy kick. You can replace eggs with flax eggs for a vegan version. For shortcuts, you can prep the batter a day in advance.
