Ingredients

Main Ingredients
  • 1.5 cups whole-milk ricotta (or part-skim) drained briefly if watery
  • 2 tablespoons extra-virgin olive oil plus more for drizzling
  • 1 tablespoon lemon juice preferably fresh
  • 0.5 teaspoon lemon zest optional, for brightness
  • 0.25 teaspoon sea salt plus flaky salt to finish
  • Freshly ground black pepper to taste
  • 3-4 tablespoons hot honey store-bought or homemade
  • 1 tablespoon chopped fresh herbs basil, chives, or thyme for garnish
  • Optional: toasted pine nuts or crushed red pepper for texture

Method

Preparation
  1. Put the ricotta in a medium bowl or food processor. If you like an extra-smooth texture, pulse the ricotta for 20–30 seconds; otherwise, whisk vigorously until creamy.
  2. Add the olive oil, lemon juice, and salt to the ricotta and stir until fully incorporated. Taste and adjust seasoning as needed.
  3. Spoon the ricotta into a shallow serving dish and create a well in the center.
  4. Warm the hot honey briefly in the microwave or in a small saucepan until pourable, then drizzle over the ricotta.
  5. Finish with olive oil, black pepper, fresh herbs, and flaky sea salt. Add nuts or chili flakes if desired. Serve immediately.
