Roasted Asparagus and Potatoes

Ingredients
  

Vegetables
  • 1 pound fresh asparagus, trimmed Substitute with green beans if needed.
  • 1 pound baby potatoes, halved Or diced regular potatoes.
Seasonings and Oils
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika Smoked or sweet, your choice.
  • 1 tablespoon freshly squeezed lemon juice
Optional Garnish
  • to taste Grated Parmesan cheese For garnish, optional.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) while you prep the veggies.
  2. Wash the asparagus and potatoes. Snap off the woody ends of the asparagus.
  3. For regular potatoes, scrub and chop them into bite-sized pieces.
Roasting Potatoes
  1. In a large bowl, combine the potatoes, olive oil, minced garlic, salt, pepper, and paprika. Toss until well coated.
  2. Spread the potatoes evenly on a baking sheet and roast for about 15 minutes until they start to soften.
Adding Asparagus
  1. After 15 minutes, take out the baking pan and gently toss in the trimmed asparagus in a single layer.
  2. Return to the oven and roast for another 10-12 minutes until everything is golden brown.
Finishing Touches
  1. Drizzle the lemon juice over the roasted vegetables and toss gently.
  2. Sprinkle on grated Parmesan cheese if using and serve immediately.

Notes
