  • 1.5 pounds fresh asparagus, ends trimmed (about 1 bunch)
  • 2 tablespoons olive oil (or avocado oil)
  • ¾ teaspoon fine sea salt, plus extra for finishing
  • ¼ teaspoon freshly ground black pepper
Toppings
  • ¼–½ cup freshly grated Parmesan (or shaved for texture)
  • 1 teaspoon lemon zest (optional)
  • 1 tablespoon lemon juice (optional)
  • 1–2 teaspoons toasted pine nuts or sliced almonds (optional garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Arrange the trimmed asparagus in a single layer on a rimmed baking sheet. Drizzle with olive oil, then sprinkle with salt and pepper. Toss gently to ensure an even coating.
  3. Slide the pan into the oven and roast for 10–14 minutes depending on thickness.
  4. About two minutes before the asparagus is done, sprinkle the grated or shaved Parmesan evenly over the spears, then return to the oven.
  5. Finish with lemon zest and a squeeze of lemon juice if using, and scatter toasted nuts for crunch.
