  • 1 teaspoon garlic powder (or fresh minced garlic if you have it on hand)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional for a tangy twist)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the broccoli florets and carrot slices with olive oil, garlic powder, salt, and pepper until well-coated.
  3. If desired, add balsamic vinegar or cheese for extra flavor.
Roasting
  1. Spread the veggies in a single layer on a baking sheet lined with parchment paper.
  2. Roast in the preheated oven for about 20-25 minutes, stirring halfway through.
  3. Look for slightly charred edges and a tender texture; that's when they're at their best.
