Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, chopped herbs, salt, and pepper. Arrange them in a single layer on a large baking sheet.
- Pat the chicken thighs dry with a paper towel, then season both sides with salt and pepper. Add the chicken thighs, sun-dried tomatoes, and olives to the bowl, drizzle more olive oil if needed, and toss to coat.
- Nestle the chicken thighs skin-side up among the potatoes on the baking sheet. Squeeze the juice of half a lemon over the top and scatter the lemon zest.
Cooking
- Roast in the preheated oven for about 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and golden.
- Let the dish rest for about 5 to 10 minutes before serving.

This dish can be prepared a day in advance and stored in the fridge raw. You can also replace chicken with chickpeas or tofu for a vegetarian option. Infuse more flavor by marinating chicken thighs beforehand.
