For the Roasted Pears
  • 4 ripe pears (Bartlett or Bosc work great) Ripe pears will caramelize better.
  • 2 tablespoons olive oil For drizzling over the pears.
  • 1 teaspoon cinnamon Adds warmth and flavor.
  • 1 pinch salt
For the Goat Cheese Topping
  • 4 ounces goat cheese (soft)
  • 1 tablespoon honey (or maple syrup for a vegan option) Enhances the sweetness.
For the Maple Walnut Drizzle
  • 1/4 cup walnuts, chopped Can substitute with pecans or omit.
  • 2 tablespoons maple syrup Give it a lovely sweetness.
  • 1 tablespoon butter (or coconut oil for a vegan version) For sautéing the walnuts.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Wash and slice the pears in half, removing the cores. Leave the skin on for added texture.
  2. Place the halved pears cut-side up on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon, and add a pinch of salt. Toss to coat evenly.
Roasting
  1. Roast the pears in the oven for about 20-25 minutes, until tender and golden brown.
Maple Walnut Drizzle
  1. While the pears roast, melt the butter (or coconut oil) in a small pan over medium heat. Sauté the chopped walnuts for about 3-4 minutes until toasty and fragrant.
  2. Add the maple syrup to the walnuts and stir until combined. Remove from heat and set aside.
Assembly
  1. Take the pears out of the oven and allow them to cool slightly. Smear a dollop of goat cheese on each pear half, followed by the warm maple walnut drizzle.
