Ingredients
  

For the Salmon Burgers
  • 1 pound fresh salmon fillet, skin removed
  • 2 tablespoons fresh ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce (or tamari for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste
For the Quick-Pickled Cucumbers
  • 1 cup cucumber, thinly sliced
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
To Serve
  • Burger buns of your choice
  • Lettuce, avocado, or any other desired toppings

Method
 

Preparation of Quick-Pickled Cucumbers
  1. In a small bowl, mix the rice vinegar, sugar, salt, and red pepper flakes until the sugar dissolves.
  2. Toss in the cucumber slices, making sure they’re well-coated. Set this aside to marinate while you prepare the salmon burgers.
Preparation of Salmon Burgers
  1. Chop the fresh salmon fillet into smaller pieces.
  2. In a food processor, pulse the salmon until it’s finely chopped but not pureed, maintaining some texture.
  3. Transfer the chopped salmon into a mixing bowl and add ginger, garlic, green onion, soy sauce, sesame oil, panko breadcrumbs, salt, and pepper. Gently combine everything.
  4. Scoop out portions of the salmon mixture and shape into burger patties about 1 inch thick.
  5. Place the formed patties on a plate and refrigerate for about 15-20 minutes.
Cooking the Burgers
  1. Heat a non-stick skillet or grill over medium heat.
  2. Add a touch of oil and carefully place the salmon patties on the surface.
  3. Cook for around 4-5 minutes on each side or until golden brown and cooked through.
Serving
  1. Assemble the burgers by placing the patties on buns with lettuce and quick-pickled cucumbers.
