- Open the cans and drain the salmon well, then flake it into a mixing bowl with a fork.
- Add the breadcrumbs, chopped onion, and bell pepper to the bowl.

- Pour in the beaten eggs, mustard, and lemon juice. Sprinkle some salt and pepper to taste.
- Mix everything until fully combined.
- Shape the mixture into patties, about 2-3 inches in diameter and set aside.
Cooking
- Heat a non-stick frying pan with a couple of tablespoons of olive oil or butter over medium heat.
- Place the salmon patties in the skillet and cook each side for about 4-5 minutes until golden brown.
- Transfer them to a paper towel-lined plate to drain any excess oil.
