Ingredients
  

Main Ingredients
  • 2 cans cans (about 14 ounces) of salmon, drained Can substitute with fresh salmon.
  • 1/2 cup breadcrumbs Panko adds extra crunch, but regular works fine.
  • 1/4 cup finely chopped onion Red or yellow is great.
  • 1/4 cup finely chopped bell pepper Optional; choose any color you like.
  • 2 pieces eggs, beaten
  • 1 tablespoon Dijon mustard Or your favorite mustard.
  • 1 tablespoon lemon juice
  • to taste Salt and pepper
  • for frying Olive oil or butter

Method
 

Preparation
  1. Open the cans and drain the salmon well, then flake it into a mixing bowl with a fork.
  2. Add the breadcrumbs, chopped onion, and bell pepper to the bowl.
  3. If you're using fresh herbs, toss in a handful for extra flavor.
  4. Pour in the beaten eggs, mustard, and lemon juice. Sprinkle some salt and pepper to taste.
  5. Mix everything until fully combined.
  6. Shape the mixture into patties, about 2-3 inches in diameter and set aside.
Cooking
  1. Heat a non-stick frying pan with a couple of tablespoons of olive oil or butter over medium heat.
  2. Place the salmon patties in the skillet and cook each side for about 4-5 minutes until golden brown.
  3. Transfer them to a paper towel-lined plate to drain any excess oil.
