Ingredients

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
For the filling
  • 3 cups apples, peeled and sliced (Granny Smith or Honeycrisp work well)
  • 1 cup brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 0.5 cup salted caramel sauce (store-bought or homemade)
For the crumble topping
  • 1 cup rolled oats
  • 0.5 cup brown sugar, packed
  • 0.75 cup all-purpose flour
  • 0.5 teaspoon cinnamon
  • 0.5 cup cold butter, diced

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. For the crust, mix together the melted butter, sugar, vanilla extract, and salt until smooth in a bowl. Stir in the flour until just combined.
  3. Press the crust mixture evenly into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden.
  4. While the crust is baking, prepare the apple filling. In a large bowl, toss the sliced apples with brown sugar, flour, cinnamon, nutmeg, and lemon juice.
  5. Once the crust is out of the oven, layer the apple mixture over the crust evenly. Drizzle salted caramel sauce over the apples.
  6. For the crumble topping, combine oats, brown sugar, flour, and cinnamon in a bowl. Mix in the cold butter until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble topping generously over the apple layer and bake for another 30-35 minutes until golden brown.
  8. Let the bars cool in the pan for at least 10 minutes before slicing.

Notes

These bars are fantastic on their own but pair wonderfully with a scoop of vanilla ice cream. Consider adding nuts for extra crunch or making it vegan with coconut oil and plant-based caramel.
