Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
- For the crust, mix together the melted butter, sugar, vanilla extract, and salt until smooth in a bowl. Stir in the flour until just combined.
- Press the crust mixture evenly into the bottom of the prepared pan and bake for 10-12 minutes until lightly golden.
- While the crust is baking, prepare the apple filling. In a large bowl, toss the sliced apples with brown sugar, flour, cinnamon, nutmeg, and lemon juice.
- Once the crust is out of the oven, layer the apple mixture over the crust evenly. Drizzle salted caramel sauce over the apples.
- For the crumble topping, combine oats, brown sugar, flour, and cinnamon in a bowl. Mix in the cold butter until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping generously over the apple layer and bake for another 30-35 minutes until golden brown.
- Let the bars cool in the pan for at least 10 minutes before slicing.

Notes
These bars are fantastic on their own but pair wonderfully with a scoop of vanilla ice cream. Consider adding nuts for extra crunch or making it vegan with coconut oil and plant-based caramel.
