Ingredients

For the crust
  • 1 package yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
For the filling
  • 1 package cream cheese (8 oz), softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 pound salted caramel sauce store-bought works great
Optional toppings
  • to taste flaky sea salt for garnish
  • to taste whipped cream

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the yellow cake mix, melted butter, and egg. Stir until you have a soft dough, then press it evenly into the bottom of your prepared baking dish.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add in the eggs and vanilla, mixing until creamy. Pour in the salted caramel sauce and mix until well incorporated.
  4. Spread the cream cheese filling over the crust in the dish.
Baking
  1. Bake in your preheated oven for about 30-35 minutes, or until the edges are lightly golden and the center is just a little wobbly.
  2. Allow the bars to cool to room temperature before refrigerating them for at least 2 hours.
  3. Once chilled, sprinkle with flaky sea salt if desired, slice into squares, and enjoy!

These bars can be made vegan by substituting cream cheese with a vegan alternative and replacing eggs with flaxseed meal mixed with water. Feel free to experiment with flavors by adding orange zest or almond extract.
