- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the Italian sausage and break it apart with a spatula until it’s crumbly and browned.
- Add the chopped onion and bell pepper, stirring until the onions become translucent (about 4-5 minutes).
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the diced tomatoes (juices included), and stir to combine well.
- Sprinkle in the oregano, red pepper flakes (if using), and season with salt and black pepper.
- Let the mixture come to a gentle simmer and cook for roughly 10 minutes.
- Remove from heat and sprinkle with fresh herbs if desired.
