  • 1 lb Italian sausage (sweet or spicy, your choice)
  • 1 can (14 oz) diced tomatoes (or 4 fresh tomatoes, chopped)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped (red or yellow for sweetness)

  • 2 tbsp olive oil (or your choice of cooking oil)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for a kick)

  • to taste Fresh basil or parsley for garnish (optional)

Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the Italian sausage and break it apart with a spatula until it’s crumbly and browned.
  3. Add the chopped onion and bell pepper, stirring until the onions become translucent (about 4-5 minutes).
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in the diced tomatoes (juices included), and stir to combine well.
  6. Sprinkle in the oregano, red pepper flakes (if using), and season with salt and black pepper.
  7. Let the mixture come to a gentle simmer and cook for roughly 10 minutes.
  8. Remove from heat and sprinkle with fresh herbs if desired.

Notes
